Ingredients :
- 2 cups basmati rice
- 4 tablespoons extra virgin organic olive oil
- 1 cup onion; diced
- 1/2 teaspoon cumin
- 1 lb. baby spinach
- 2 tablespoons garlic; minced
- Lemon zest of just one lemon
- 2 1/2 cups chicken broth
- 4 tablespoons fresh dill; chopped
- 1/2 teaspoon pepper
- Salt; to taste
Preparation:
- Select the *Meat/Chicken* mode for your Power Pressure Cooker XL and hang up for fifteen minutes.
- Add the oil and chicken on the heating pot. Stir cook until brown.
- Stir in mushrooms, garlic and onions. Cook for 3 minutes.
- Add every one of the remaining Ingredients on the cooking pot.
- Secure the lid and turn pressure to achieve success knob about the closed position.
- Once done; release pressure completely and take from the lid. Serve warm.
