Creamy Curry Lentil Soup  recipe


  • 1 red onion, diced
  • 3 cloves garlic, peeled and minced
  • 2 tablespoons red curry paste
  • 1 (15-ounce) can coconut milk
  • 2 cups vegetable stock
  • 1 ½ cups lentils
  • 2 ripe tomatoes, chopped
  • Salt and ground black pepper, to taste  


  • Choose the “Sauté” function on your cooker. Sauté the onion
  • and garlic until beginning to brown. You can add a splash of
  • stock to prevent the mixture from sticking.
  • Then, choose the “Cancel”. Add the curry paste, and stir well.
  • Pour in the coconut milk and stock. Now add lentils and
  • tomatoes. Season with salt and black pepper.
  • Stir again to combine well.
  • Close the lid and choose “Manual”; set the time to 6 minutes.
  • Serve warm and enjoy!
