Creamy Curry Lentil Soup recipe
(Ready in about 15 minutes | Servings 6)
Ingredients:
- 1 red onion, diced
- 3 cloves garlic, peeled and minced
- 2 tablespoons red curry paste
- 1 (15-ounce) can coconut milk
- 2 cups vegetable stock
- 1 ½ cups lentils
- 2 ripe tomatoes, chopped
- Salt and ground black pepper, to taste
Directions:
- Choose the “Sauté” function on your cooker. Sauté the onion
- and garlic until
beginning to brown. You can add a splash of
- stock to prevent the mixture from sticking.
- Then, choose the “Cancel”. Add the curry paste, and stir
well.
- Pour in the coconut milk and stock. Now add lentils and
- tomatoes. Season with salt and black pepper.
- Stir again to combine
well.
- Close the lid and choose “Manual”; set the time to 6
minutes.
- Serve warm and enjoy!
