Black Bean Soup recipe

Ingredients


  • 1 ½ cups dry black beans, soaked overnight
  • 2 tablespoons vegetable oil
  • 1 large-sized onion, chopped
  • 4 cloves garlic, minced
  • 12 teaspoon chipotle powder
  • 6 cups vegetable stock
  • 2 large bay leaves
  • 2 teaspoons dried basil leaves
  • 1 teaspoon sea salt
  • 14 teaspoon ground black pepper
  • Cayenne pepper to taste
  • Fresh chopped cilantro, for garnish  

Directions


  • Drain black beans and reserve.
  • Push “Sauté” button; warm vegetable oil. Then, sauté
  • the onion and garlic for 2 to 4 minutes.
  • Add the chipotle powder, reserved beans, vegetable stock,
  • bay leaves, and basil; season with salt, black pepper, and
  • cayenne pepper; stir well.
  • Next, lock the lid in place, and click the “Manual”; cook
  • for 7 minutes. Allow the pressure to come down gradually
  • and naturally; carefully remove the lid.
  • Garnish with cilantro and serve.
